When working on your wedding cake, over emphasize the things that are important to you. Decorations, flavors, colors are all important parts of what the over all cake will consist of. Many of my brides say they want something “simple”, “elegant”, not overly ornate, but what does this actually mean? Think things over before any bridal consultation. Bring pictures, colors, anything/anyone (your Aunt Betsy!) that will help you describe what you are looking for to the wedding vendor you are having the appointment with. Anything that you may not be clear on, wait, take a deep breath and let the vendor know you will get back to them.

The Florist and the Cake Baker

Who does the flowers on the cake? Many bakeries have their own florists that they employ to do the wedding cake and other bakers have the florist that you have hired for your wedding do the flowers. I have the florist do mine because they are the professional in this area and you have spent hundreds, if not thousands of dollars, and a lot of time, working on the floral part of your wedding. The cake should tie in with what you are doing for bouquets and center pieces. That is why I work with the bridal florist to come up with flowers that compliments the cake. My delivery time corresponds with the floral delivery so at no time am I making the florist wait to decorate the cake.

I just finished a wedding cake that was such a dark shade of maroon it looked black. While the bride was trying to match a color swatch from the bride’s maids dresses, it is important to remember that not all colors look edible to your guests. It was a nice concept to have all colors match and I can match almost all colors I am given, but sometimes less is more.

Flowers for your cake

When it comes to putting flowers on your cake, there are many options available to you. Fresh, silk, fondant, gum-paste.. all are good ideas the only real worry is to make sure anything you use is food safe for the cake. As your baker, I have to assume all parts of your cake may be eaten. (A bride I knew used gold fish in her center pieces and after a few drinks and a dare, many of the gold fish were eaten!)  Use what works best for you for colors,textures and financially. As long as they match the rest of the wedding flowers, you can’t go wrong!

You plan your wedding so far in advance that it can be a real disappointment if the day of the wedding is not perfect weather-wise. In making a cake, I have to consider all weather situations. The outside weddings present the biggest challenges. But there is a cake for every situation and it is very helpful when the bride is open to suggestions. Play “worst case scenario” and if you can still be happy at the end of the day, then you have thought of everything!
